We all love a cheese toastie, don’t we? Well next time you’re in the mood for one, give yourself a little treat with this winter warmer toastie packed full of cheese goodness and delicious sausages.
2 tbsp olive oil
2 low-carb sausages (min. 97% meat), skinned
¼ tsp fennel seeds, ground
1 garlic clove, finely chopped
1 red chilli, sliced
4 slices LivLife bread
50 g grated mozzarella
- Heat half the olive oil in a small frying pan and fry the sausage meat with the fennel, garlic and chilli for 5 minutes, or until it starts to colour.
- Meanwhile, heat a panini press. Brush the bread with the rest of the oil and put two slices, oil side down in the sandwich maker.
- Top with the cheese and sausage, then add the second two slices of bread, oil side up.
- Close the panini press and cook according to the manufacturer’s instructions or until golden brown and crisp on the outside.
