Did you know adding smoked salmon to your plate of scrambled eggs gives your body a boost of long-chain omega-3 fatty acids, contributing to a healthy heart and protecting the brain and nervous system? Here’s some inspiration for an ideal Sunday brunch.

Serves 2

1 tbsp butter

6 eggs, lightly beaten

4 slices LivLife, toasted

100 g smoked salmon

a small bunch of chives, chopped

  1. Melt the butter in a non-stick saucepan, then add the eggs and stir well.
  2. Season with a pinch of salt, then continue to stir over medium heat until the eggs scramble and thicken to your preferred texture.
  3. Lay two slices of toast on each plate and spoon over the scrambled egg. Arrange the salmon to the side and sprinkle with chives and black pepper.
