8 slices LivLife bread, toasted and cut into triangles
olives and mixed crudité to serve (radishes and celery are good keto choices)
For the whipped feta:
200 g feta cheese
100 g crème fraiche
100 g Greek yoghurt
1 garlic clove, crushed
½ lemon, juiced and zest finely grated
For the herb + pistachio swirl:
20 g salted pistachio kernels, finely chopped
2 tbsp flat-leaf parsley, finely chopped
1 tbsp mint leaves, finely chopped
4 tbsp olive oil
½ lemon, juiced
- To make the whipped feta, put the feta, crème fraiche, yoghurt, garlic, lemon juice and lemon zest in a food processor and blend until smooth. Pass the mixture through a sieve for an extra smooth texture, or just serve it as it is.
- To make the herb swirl, stir all of the ingredients together and season to taste with salt and pepper.
- Spread the whipped feta onto a plate or shallow bowl and swirl the herb oil on top.
- Serve with warm toast triangles and mixed crudité.
